She got into the kitchen of the Horcher restaurant through a silly bet and ended up scrubbing pot bottoms at just eighteen years old. Samantha Vallejo-Nágera didn't come to the trade through a family inheritance of cooking or out of immediate financial need. She belonged to a lineage of distinguished doctors and writers, where cooking was, at most, a Sunday pastime.

But physical work got her hooked. She left her landscape design studies in Madrid and swapped garden blueprints for sixteen-hour shifts in cold rooms.

She went to London as a jack-of-all-trades, cooking for local families who started calling her Samantha de España to save themselves the bureaucratic hassle of her compound surname. Later came tough stints at Paul Bocuse's school in Lyon and a training period on the line at the Arzak restaurant in San Sebastián. In New York, she learned culinary plating and styling alongside decorator Antony Todd.

She returned to Madrid with a notebook full of contacts and no desire to work for others.

From Refrigerated Vans to Millions

In 1995, she founded Samantha de España Catering. The company started with secondhand vans and home jobs for acquaintances in her social circle. The business then grew steadily toward large corporate events and weddings with three hundred guests.

The model worked because she calculated margins with an accountant's coolness. While other chefs went broke chasing gastronomic awards in empty dining rooms, her company reached revenue exceeding three million euros a year starting in 2020. Event catering demands military precision in transport and strict control of the product. A cold sirloin for four hundred people can ruin a contract in ten minutes.

The Set That Changed the Spotlight

In 2013, Televisión Española and the production company Shine Iberia hired her to join the judging panel of MasterChef. She shared the table with Pepe Rodríguez and Jordi Cruz from the very first season, taking on a role focused on plating, aesthetics, and service protocol.

Commercial television is a meat grinder. Many chefs who tried to break into the screen got trapped in caricature or neglected their real businesses.

She kept up the pace of filming without letting go of the catering business.

For more than a decade, she moved through the regular versions of the competition with MasterChef Celebrity, MasterChef Junior, and special editions for adults. She surpassed four hundred aired episodes on public television without losing sponsors or her weight on the judging panel. That exposure helped boost sales of books such as Quedar bien sin complicarte la vida and Samantha y Roscón, the latter focused on day-to-day life with her third child.

The Fire of Pedraza and Clear Books

In 2018, she bought a 17th-century Castilian mansion on the main square of Pedraza, in Segovia. The renovation took three years and withstood the mandatory pause of the health crisis before opening in December 2021 under the name Casa Taberna.

The restaurant's concept ruled out foams in favor of charcoal grilling and straightforward, local produce. It earned a Repsol Sun thanks to a menu built around aged beef chops and legumes from the Segovia region.

Restaurant work demands constant cash flow.

The property has five guest rooms that run at an average occupancy of seventy percent in high season, plus a dining room staff of about ten employees. After the peak in visits recorded in 2023, the management company restructured dining room shifts to offset rising energy costs during the winter months.
