In October 2012, Spanish television discovered that a chubby guy in psychedelic jackets could hold millions of viewers with shouting and common sense. Alberto Chicote did not come from acting schools or talent agencies. His natural habitat was the kitchens of Madrid and the muddy rugby fields of Madrid, where in the 1980s he played scrums alongside Javier Bardem.

At seventeen, he enrolled in the Escuela Superior de Hostelería y Turismo de Madrid. He worked the stoves at renowned restaurants such as Zalacaín and Lúculo and completed his training in Switzerland before becoming head chef at El Cenachero in 1995.

Three years later, he opened Nodo, where he blended Iberian pantry staples with Japanese techniques at a time when almost no one in the country could pronounce tataki. The work earned him the title of best chef of the year in 2005 from Madrid Fusión. Then, in 2006, he opened Pandelujo, a design-forward spot in the Salamanca neighborhood that attracted film directors and television executives.

Nobody saw such an impact coming.

Conquering prime time and scripted TV sets

The arrival of Pesadilla en la cocina in 2012 shook up the dynamics at laSexta. An adaptation of the British format hosted by Gordon Ramsay, the show turned grimy restaurants on the brink of ruin into relentless reality TV. Chicote didn't put on an act for the camera, because he used the same blunt, direct style he had spent decades applying to leading restaurant brigades.

The broadcast came close to record numbers, surpassing a 15% audience share in its first season.

His on-screen presence soon caught the attention of the film industry. By 2008, he had already appeared in El pollo, el pez y el cangrejo real, a documentary feature directed by José Luis López-Linares that captured the fierce competition of the international Bocuse d’Or contest.

But it was mainstream comedy that made his public face famous. In 2015, director Nacho G. Velilla cast him as a priest in the film Perdiendo el norte. Years later, in 2020, Santiago Segura drew on his persona for a comic scene in Padre no hay más que uno 2: La llegada de la suegra. And in 2023, he filmed a special appearance playing himself in the daily series Amar es para siempre.

And the formula was a smash hit.

In 2013, he took over hosting Top Chef on Antena 3 alongside Susi Díaz and Ángel León. The show demanded a more technical, rigorous approach, with Chicote judging dishes with surgical precision in front of top-level professionals.

Hidden-camera audits and old scores to settle

Starting in 2018, the chef toughened up his TV persona with ¿Te lo vas a comer?. He set aside bar rescues to focus on investigative reports exposing food fraud in retirement homes, schools and local festivals. There were calls to the local police, chases through the streets and doors slammed in the faces of the entire film crew.

In 2020, he made a drastic financial decision and sold his stake in the restaurant Yakitoro to start from scratch.

So in 2022, he opened Omeraki in Madrid with Inmaculada Núñez. He built a space with no double meal shifts and no photo wall, designed to work free from the pressure of restaurant guides. In 2024, he returned to regional and national television with the competition show Batalla de restaurantes, adapting the format of direct competition between restaurateurs from the same region.

The restaurant business doesn't forgive mistakes.

In its first eight seasons, Pesadilla en la cocina intervened at nearly a hundred establishments across Spain, and more than sixty percent ended up closing for good a few months after the crew packed up its cables and turned off the lights.
