Nobody at Prado del Rey understood how a Basque cook cracking vulgar jokes while chopping onions could tank the ratings at noon. In 1991, public television still dragged around a stiff solemnity of talking busts. Karlos Arguiñano arrived with an old frying pan, a almost street-smart ease, and a naturalness that completely threw Televisión Española's executives off balance.
Before stepping in front of the spotlight, he spent years as a stonemason among the stoves. At seventeen, he started as a sheet metal worker at the train factory in Beasain, but he didn't last long among the metal plates. He moved on to the Hotel Euromar Hospitality School in Zarautz, under the guidance of Luis Irizar, where he crossed paths with the generation that would found the new Basque cuisine.
In 1979, he bought a stone castle on the beach in Zarautz to open his own restaurant. His debts to the banks reached thirty million pesetas, and the mortgage nearly suffocated the business before it could take off.
No one ever wrote a single line of dialogue for him.
The Basque regional broadcaster gave him his first show in the late 1980s. The production team discovered he didn't need scriptwriters, cue cards or rehearsals. All he needed was to be left to talk alone in front of the camera.
In 1997, Juanma Bajo Ulloa offered him the role of Don Serafín in Airbag, the owner of the farmhouse that served as a front for a prostitution ring. Arguiñano showed up on set with no acting method whatsoever, dropped profanities with devastating ease, and starred in some of the wildest scenes of 1990s Spanish cinema. Karra Elejalde and Manuel Manquiña found in him the perfect partner in crime for that road-trip chaos.
The film experiment was no coincidence. That same year, he founded Bainet Media, a production company designed to control every minute of footage that carried his name. Through this company, he financed comedies such as Año mariano in 2000, where he again shared the screen with Elejalde, and El rey de la granja in 2002.
The audience fell for the trick instantly.
But the real business was never just about recipes or movie screens. With Bainet, he built a content factory that filled the mornings of private television with imported formats such as Bricomanía and Decogarden. He bought the TV rights to Basque pelota through the company Asegarce and turned frontón broadcasts into a profitable audiovisual product that filled the weekends.
Between 1997 and 2000, he crossed the pond to settle in Argentina. On Canal 13, he recorded dozens of morning shows, blending his Donostia slang with Buenos Aires lunfardo without missing a beat. He taped marathon sessions in Buenos Aires and flew to Madrid to keep his Spanish schedule going. He once aired two daily shows on two different continents without viewers noticing the physical toll of transatlantic travel.
In 2010, he broke off his relationship with Telecinco after a decade at the top of the ratings and signed with the Atresmedia group to air Karlos Arguiñano en tu cocina, later renamed Cocina abierta de Karlos Arguiñano. The contract's condition was non-negotiable: the production company delivered the finished tape from its facilities in Gipuzkoa, with no network interference in editing or content.
The real business was never in the parsley.
He made occasional appearances in Rey Gitano in 2015 and in the Basque-language film Igelak in 2016, always playing himself or exploiting his own folksy caricature. Directors knew his on-screen presence brought no dramatic subtlety, but it guaranteed an immediate connection with the box office.
On his set in Zarautz, working days are billed in blocks of four broadcasts per session with a technical crew of sixteen people. Broadcast contracts are renewed every year, and high-definition tapes are sent to the central control room in San Sebastián de los Reyes with an exact lead time of eighteen days.
